பிரியாணி தமிழர்களின் உணவா..?

பிரியாணி என்ற வார்த்தையைக் கேட்டதும் பெரும்பாலானோருக்கு ஐம்புலன்களும் நடனமாடும். அப்படிப்பட்ட இதன் சொந்த ஊர் இந்தியா அல்ல என்பதுதான் நிதர்சனம்! இவற்றின் அசல் பிறப்பிடம் எது என்ற ஆதாரம் இல்லையென்றாலும், பெரும்பாலான ஆய்வாளர்கள் நம்பும் வரலாறு மற்றும் இந்தியாவின் பிரபல பிரியாணிகளின் ஸ்பெஷாலிட்டி பற்றிய சுவாரஸ்ய தகவல்கள் இங்கே...

வரலாறு:

பெர்சிய நாட்டுப் போர்வீரர்களின் உணவே இன்று நாம் அனைவரும் விரும்பிச் சாப்பிடும் `பிரியாணி'. போருக்காக நாட்டைவிட்டு வெகுதூரம் பயணம் செய்யும் வீரர்கள், கையில் கொஞ்சம் அரிசி மற்றும் மசாலாப் பொருள்களை எடுத்துச் செல்வது வழக்கம். போர் நேரம் முடிந்தவுடன், காட்டுக்குள் சென்று அங்கு இருக்கும் மிருகங்களை வேட்டையாடி, ஓய்வெடுக்கும் இடத்துக்குக் கொண்டுவருவார்கள்.

 பிறகு, நாட்டிலிருந்து கொண்டுவரப்பட்ட மசாலா கலவையை, மாமிசம் மீது தடவி, இரவு முழுவதும் ஊறவைத்துவிடுவர். அதிகாலையில், நன்கு ஊறிய மசாலா மாமிசத்தை, அரிசியோடு கலந்து தண்ணீர் ஊற்றி கனமான பொருளைக்கொண்டு இறுக்கமாக மூடிவிடுவர். பிறகு, ஆழமான குழியில் தீ மூட்டி, இந்தக் கலவைப் பாத்திரத்தை அதன் மீது வைத்து அடைத்துவிடுவார்கள். நண்பகல் போருக்குச் செல்வதற்கு முன், நன்கு வெந்து இருக்கும் இந்தச் சாதத்தைச் சாப்பிடுவார்கள்.

முதலில் வெறும் மசாலாவை மட்டுமே உபயோகப்படுத்திய வீரர்கள், பிறகு நறுமணத்துக்காக அந்நாட்டில் கிடைக்கக்கூடிய சில வாசனைப்பொருள்களைச் சேர்க்க ஆரம்பித்தனர். இப்படி போர் வீரர்கள் சாப்பிட்ட இந்தக் கலவைச் சாப்பாடு, நாளடைவில் அந்நாட்டில் உள்ள இஸ்லாமிய மக்களால் விரும்பிச் சாப்பிடும் உணவாக மாறியது. அங்கிருந்து இந்தியாவுக்குப் பயணித்த முகலாயர்களால் கலவை உணவு, மன்னர் குடும்பம் மட்டும் உண்ணும் `பிரியாணியாய்' உருவெடுத்தது.

போர்வீரர்களுக்குப் போதுமான அளவு சத்துடைய உணவு இல்லாததைக் கண்ட ஷாஜஹானின் மனைவி மும்தாஜ், போர்வீரர்களுக்கு பிரியாணியின் செய்முறையைக் கற்றுக்கொடுத்தார். அன்று முதல், இஸ்லாமியர்கள் ஆட்சிசெய்த இடங்களிலெல்லாம் பிரியாணி பரவியிருந்தது. ஹைதராபாத் நிஜாம் ஆட்சிக்காலத்தில்தான் முதன்முதலில் இதில் நெய் சேர்க்கும் முறை உருவானது. பிரிட்டிஷ் ஆதிக்கம் அதிகம் இருந்ததால், அவர்களுக்குப் பரிமாறப்படும் பிரியாணிகளில் நெய் சேர்த்து வழங்கினர். 

பிறகு, இடத்துக்கு ஏற்றார்போல் பல்வேறு வகையான பிரியாணிகள் உருவாகின. அரண்மனைச் சமையலறை வரை மட்டுமே பரவியிருந்த இதன் ரெசிபி, இந்தியா சுதந்திரம் அடைந்த பிறகு பொதுமக்களுக்கும் போய்ச்சேர்ந்தது.

 பிரியாணி வகைகள்:

வரலாறு ஒருபக்கம் இருக்கட்டும். திண்டுக்கல் முதல் லக்னோயி வரை ஏகப்பட்ட வகைகள் இருக்கின்றன. ஒவ்வொன்றின் தனித்துவம் என்ன என்பதை இனி பார்ப்போம்...
திண்டுக்கல் :
பிரியாணி என்றாலே நீள அரிசியான `பாசுமதி' வகை அரிசியில் இருப்பதுதான் நம் நினைவுக்கு வரும். ஆனால், திண்டுக்கல் தலப்பாக்கட்டி பிரியாணி என்றாலே பொடிப்பொடியாக இருக்கும் `சீரக சம்பா' அரிசி வகைதான். சீரக சம்பா அரிசியின் மணம் நிச்சயம் அனைவருக்கும் வித்தியாச மணமாக இருக்கும். வழக்கத்துக்கு மாறாக அதிகப்படியான மிளகுத்தூள் இதில் உபயோகப்படுத்தியிருப்பார்கள். இதில் நீளமான இறைச்சித் துண்டுகளைப் பார்ப்பதற்கு வாய்ப்பே இல்லை. குழந்தைகளும் எளிதில் உண்ணக்கூடிய சிறிய இறைச்சித் துண்டுகள், தயிர் மற்றும் எலுமிச்சை சாரின் 'Tangy' டேஸ்ட் இந்த அருமையான திண்டுக்கல் சீரக சம்பா பிரியாணியில் நிறைந்திருக்கும்.

ஆம்பூர் :

சென்னையிலிருந்து பெங்களூர் செல்லும் வழியில், தூங்கிக்கொண்டிருப்போரையும் சுண்டி இழுக்கும் இடம் ஆற்காடு. பாரம்பர்யமிக்க அசல் ஸ்டார் பிரியாணி இங்குதான் கிடைக்கும். ஆற்காடு நவாப் குடும்பத்துக்குச் சமைத்துக் கொடுத்த அனுபவத்திலிருந்து தொடங்கியதுதான் இந்த ஆம்பூர் வகை பிரியாணி. சிக்கன், மட்டன், பீஃப் மற்றும் இறால் போன்ற இறைச்சிகளோடு சுவையான ஆம்பூர் பிரியாணியின் தனித்துவம், அதில் சேர்க்கப்பட்டிருக்கும் புதினா மற்றும் மல்லித்தழைகள்தான். அதுமட்டுமல்லாமல், புளிக்காத புதிய தயிரில் இறைச்சியை நன்கு ஊறவைத்து, பிறகு சாதத்துடன் சேர்ப்பதால் தனி ருசியை இதில் உணரலாம்.

ஹைதராபாதி :

இந்தியாவில் பிரியாணி என்றாலே ஹைதராபாதிதான். முகலாயர்களின் ஆதிக்கம் அதிகம் இருந்த ஹைதராபாத்தில், பிரியாணியின் ஆதிக்கமும் குறைவில்லாமல் இருக்கிறது. ஹைதராபாத் நிஜாம் சமையலறையில் உருவான இந்தப் பிரியாணியை இரண்டு வகையாகப் பிரிக்கலாம். இறைச்சியை மசாலாவோடு கலந்து இரவு முழுவதும் ஊறவிட்டு மறுநாள் அரிசியோடு கலந்து தயாராவது 'கச்சி பிரியாணி'. இறைச்சி மற்றும் மசாலாவை ஊற வைத்து உடனே வேகவும் வைத்து, தயாரான கிரேவியை சாதத்தோடு கலப்பது 'பக்கி பிரியாணி'. குங்குமப்பூ மற்றும் தேங்காய் சேர்க்கப்படும் இதில், விதவிதமான நறுமணப்பொருள்களும் சேர்க்கப்படுகின்றன. இவையே இதற்கு தனித்தன்மையைக் கொடுக்கின்றன. இதற்கு பெஸ்ட் காம்பினேஷன், கத்திரிக்காய் தொக்கு.

தலசேரி:

கீமா அரிசி சாதம், முந்திரி, திராட்சை போன்றவற்றோடு நன்கு சமைத்த இறைச்சி மசாலாவைச் சேர்த்தால் `தலசேரி பிரியாணி' ரெடி. மற்ற வகைகள்போல இல்லாமல், மலபார் அல்லது தலசேரிவகை பிரியாணி முற்றிலும் வித்தியாசமானது. பாசுமதி அரிசி வகையை இவர்கள் என்றுமே உபயோகிக்க மாட்டார்கள். முகலாயர்கள் மற்றும் மலபார் உணவு வகையின் பொருள்கள் ஒருசேரக் கலந்து புதுமையான சுவையைத் தருகிறது. உண்ணும் நேரத்தில்தான் கிரேவியோடு சாதம் கலக்கப்படும். இதனால், சுவைக்கேற்ப தேவையான மசாலாவை உபயோகித்துக்கொள்ளலாம்.

லக்னோயி :

இதுதான் பெர்சியன் ஸ்டைல் பிரியாணி. அதாவது, `தம் பிரியாணி'. முதலில் கிரேவி மற்றும் இறைச்சியைப் பாதியளவு வேகவைத்து, பிறகு கனமான பொருளைக்கொண்டு இறுக்கி அடைத்து அதன்மேல் சுடச்சுட கரித்துண்டுகளைப் பரவி, அதன் சூட்டில் ரெடியாவது `தம் பிரியாணி'. இதில் மேற்கத்திய நாட்டு மசாலா அதிகம் பயன்படுத்துவதால், மற்ற பிரியாணிகளைவிட காரம் குறைவாக இருக்கும்.
ருசியான உணவு என்பதால், பலர் தினமும் இதைச் சாப்பிடுவதை வழக்கமாகிக்கொண்டுள்ளனர்.

பிரியாணி பரவிய முறை:

வடக்கில், அவாத்தை (இன்றைய லக்னோ) முகலாயர்கள் சில காலம் ஆண்டனர். அங்கிருந்து அவாதி பிரியாணி என இந்தியா முழுவதும் பரவ ஆரம்பித்தது. பின்னர் தில்லியிலிருந்து முகல் பிரியாணிஎன்றும் பரவியது.

பின்னர் 1856-ல் கல்கத்தாவை ஆண்ட நவாப் வாஜித் அலி ஷா மூலம் கல்கத்தா பிரியாணி உருவாகி பரவியது.

தென்னிந்தியாவில், மைசூர் திப்பி சுல்தானின் கோட்டையில் பல சைவ இந்து சமையல்காரர்களின் மூலம் வெறும் காய்கறிகளின் வைத்து, தாகிரி பிரியாணி சமைத்து பரப்பினார்கள். 

அதே காலகட்டத்தில் ஹைதராபாத்தை ஆண்ட நிஜாம்கள்  மூலம் ஹைதிராபாதி பிரியாணி  என்றும் ஆற்காட்டை ஆண்ட நவாப்கள் (வாணியம்பாடி/ஆம்பூர்)  ஆற்காடு பிரியாணி  என இந்தியா முழுவதும் பரவவிட்டனர்.

கேரளத்தில், கோழிகோடு தலச்சேரி வழியாக படையெடுத்து வந்த நவாப்கள், அந்த பகுதிகளை சில காலம் ஆண்டனர். அங்கிருந்து தலச்சேரி பிரியாணி என ஊரெங்கும் என்று பரப்பினர்.

இன்னும் இதை தவிர கடலோர கர்நாடகாவில் பத்களி பிரியாணி,   மகாராஷ்டிராவில் பம்பாய் பிரியாணி, ஜம்முவில் காஷ்மீர் பிரியாணி, குஜராத்தில் மிமோனி பிரியாணி,  தமிழ் நாட்டில் திண்டுக்கல் பிரியாணி என பிரியாணி வகையாறாக்கள் இந்தியா முழுவது பறந்து விரிந்து பரவியுள்ளது. 

இந்தியா தவிர சிலோன் பிரியாணி, பாகிஸ்தான் சிந்தி பிரியாணி ,மலேசியன் பிரியாணி என கடல் கடந்தும் பிரியாணிகள் மக்களை ஆட்கொண்டுள்ளது. 

எதையும் அதிகம் சாப்பிடுவது உடல் நலனுக்கு நல்லதல்ல என்பதையும் மனதில் வைத்துக்கொள்ளுங்கள்.

Is biryani Indian food..?


For most people, the senses dance when they hear the word biryani. The fact is that India is not such a hometown! Although there is no evidence of their original origins, here is some interesting information about the history that most researchers believe and the specialties of India's famous biryani.

History:

Biryani is the food of the Persian warriors that we all love to eat today. Soldiers who traveled long distances from the country for war usually carried some rice and spices with them. When the time of war is over, they go into the forest and hunt the animals there and bring them to the resting place.

Then, rub the spice mixture, brought from the country, onto the meat and let it soak overnight. In the early morning, mix the well-saturated spicy meat with the rice, pour water over it and cover tightly with a heavy object. Then, set fire to the deep pit and put this mixture pot on it and seal it. Before going to battle at noon, they will eat this well-cooked asparagus.

The warriors, who at first used only spices, then began to add some of the spices available in the country for fragrance. This mixed meal, eaten by war veterans, eventually became the favorite food of the Islamic people in the country. From there the mixed food by the Mughals who traveled to India evolved into a `biryani 'eaten only by the royal family.

Shah Jahan's wife Mumtaz, who saw that the warriors did not have enough nutritious food, taught the warriors the recipe of biryani. From that day on, biryani was spread all over the places ruled by the Islamists. Ghee was first introduced during the rule of the Nizam of Hyderabad. As the British dominance was high, ghee was added to the biryani served to them.

Later, different types of biryani were developed according to the place. The recipe, which spread only to the palace kitchen, went public after India's independence.

Types of Biryani:

Dindigul:

Biryani reminds us of the long-lasting rice 'Basmati' type of rice. But, Dindigul Talappakkatti Biryani is a kind of powdered 'Chiraka Samba' rice. The meat is mixed with spices and soaked overnight and the next day mixed with rice to prepare 'Kachchi Biryani'. Thalassery:

`Thalassery Biryani 'is ready if you add well-cooked meat masala with keema rice, cashews and raisins. Unlike other varieties, Malabar or Thalassery type biryani is completely different. They will never use basmati rice. The ingredients of Mughal and Malabar cuisine combine to give an innovative taste. Rice is mixed with gravy at meal time. Lucknow:

This is the Persian style biryani. I.e., `Tham Briyani '. First the crayfish and meat are half-boiled, then stuffed with a heavy substance and spread with roasted charcoal on top of it, making a radiant `tum biryani 'in its heat. It uses more Western spices and is less salty than other biryani.

உணவு விரயம் ஒரு சமூகக் குற்றமா..?


  

உணவை விரயமாக்குவது இந்தியாவில் மட்டும் நடக்கும் நிகழ்வல்ல; உலகம் முழுவதிலும் நடக்கும் சமூக அநீதி! எத்தனையோ சிரமங்களுக்கு இடையில் உணவுக்கான பொருளை விளைவித்துத் தரும் விவசாயிக்குச் செய்யப்படும் அவமரியாதை. உணவு என்பது ஜடமல்ல... அது ஓர் உயிர்ப் பொருள். உலகில் சுமார் 70 கோடி மக்கள் இரவில் உணவு கிடைக்காமல் பசித்த வயிற்றோடு தினமும் உறங்கச் செல்கின்ற சோகமான நிலைமை ஒருபுறம் என்றால், உணவின் மொத்த உற்பத்தியில் சுமார் 20% உணவு விரயமாகிறது என்கிறது ஐநாவின் ‘உணவு விரயக் குறியீடு 2021’ ஆய்வறிக்கை.

54 நாடுகளில் மேற்கொண்ட அந்த ஆய்வின்படி, உலக அளவில் 2019-ல் 9.31 கோடி டன் அளவில் உணவுகள் விரயம் செய்யப்பட்டுள்ளன. இதில் 61% வீடுகளிலிருந்தும், 26% உணவு விடுதிகளிலிருந்தும் 13% சில்லறை விற்பனையிலிருந்தும் விரயமாகியிருப்பதாகத் தெரிவிக்கப்பட்டிருக்கிறது. 

இந்திய வீடுகளில் 2019-ல் மட்டும் 6.80 கோடி டன் அளவில் உணவு விரயம் செய்யப்பட்டுள்ளது. உலகில் உணவை நுகரும் வாய்ப்புள்ள ஒரு தனிநபர் வருடத்துக்கு 74 கிலோ உணவை வீட்டிலிருந்தும், 47 கிலோ உணவைத் திருவிழாக்கள், உணவகங்கள், திருமண நிகழ்வுகள், சமூக நிகழ்வுகள் ஆகியவற்றில் பரிமாறப்படும் உணவிலிருந்தும் விரயம் செய்யப்படுவதாக அந்தப் புள்ளிவிவரம் சுட்டிக்காட்டுகிறது.

என்ன விளைவுகள் ஏற்படும்?
உணவு விரயம்’ என்பது உணவுத் தட்டோடும் சாப்பிட்ட இலையோடும் முடிந்துவிடும் சமாச்சாரம் என்றுதான் அநேகரும் நினைத்துக் கொண்டிருக்கின்றனர். பொருளாதார அறிவியல், உணவை விரயம் செய்வதை மனிதன் செய்யும் மிகப் பெரிய சமூகக் குற்றம் என்கிறது. 

காரணம், நிலத்திலிருந்து உணவுப் பொருள்கள் உற்பத்தியாகி, ஓர் எரிபொருள் மூலம் உணவாக உருவெடுத்து, தகுந்த பாதுகாப்பு, பகிர்வு எனப் பல கட்டங்களைக் கடந்து உணவுத் தட்டுக்கு வருவதற்கு ஆகும் செலவு உணவை விரயமாக்குதல் வழியாகப் பல மடங்கு அதிகரிக்கிறது. அது அந்த நாட்டின் பொருளாதாரத்தைப் பெரிதும் பாதிக்கிறது.மேலும், அது சுற்றுச்சூழலுடனும் பிணைந்துள்ளது என்கிறது. 

எப்படி?

மிச்சமான உணவு, கெட்டுப்போன உணவு என நுகர்வோரால் பல வழிகளில் விரயம் செய்யப்படும் உணவு மறுபடியும் மண்ணுக்குத்தான் வருகிறது. அங்கு அது ‘மீத்தேன்’ எனும் பசுங்குடில் வாயுவை அபரிமிதமாக வெளிவிடுகிறது. புவியின் வெப்பநிலை அதிகரிக்க அதுவும் ஒரு காரணமாகிறது. அது பருவநிலை மாற்றத்துக்குத் துணைபோகிறது.

தற்போதெல்லாம் மழைக்காலப் பருவங்கள் மாறுவதற்கும், இயல்புக்கு மீறி கோடைகாலம் நீடிப்பதற்கும், கடுங்குளிர் நம்மை வாட்டியெடுப்பதற்கும் பெரும் பனிப்பாறைகள் உருகிக் கடல் மட்டம் ஏறுவதற்கும் திடீர் திடீரெனப் புதிய நோய்த் தொற்றுகள் உருவாவதற்கும் உணவு விரயமும் ஒரு காரணம்தான் என்பதை நம்மில் எத்தனை பேர் அறிவார்கள்?

சுற்றுச்சூழல் மாசுபாட்டைக் கட்டுப்படுத்த வேண்டுமானால்,உணவு விரயத்துக்கும் முற்றுப்புள்ளி வைக்க வேண்டுமல்லவா?

தேவை மறுசுழற்சி

பிடிக்கும் உணவு’ என்பதற்காக எல்லாவற்றையும் வாங்கி எல்லாவற்றிலும் கொஞ்சம் மிச்சம் வைப்பதற்கு மாற்றாக, தேவைக்கு வாங்கி, தேவைக்குச் சாப்பிட்டு, அப்படியும் மிச்சம் இருந்தால் குப்பைத் தொட்டிக்குள் வீசாமல், உணவு தேவைப்படுபவர்களுக்குக் கொடுத்துப் பழகும் ‘பகுத்துண்டு பல்லுயிர் ஓம்பும்’ பண்பை வளர்த்துக்கொள்வது உணவு விரயமாவதைத் தடுப்பதற்கான முதல் படி. அதை இன்றே நாம் சிரமேற்கொள்ளலாமே!

உணவை மண்ணுக்குப் போகவிடாமல் தடுத்தும் அதை முறைப்படி சேகரித்தும் மறுசுழற்சி மூலம் விலங்குகள் மற்றும் பறவைகளுக்கு உதவும் உணவாகவோ, அது பிறந்த மண்ணுக்கே உதவும் இயற்கை உரமாகவோ மாற்றிவிட முடியும். அதற்கும் வழி செய்வோமே! அடுத்ததாக, மண்ணில் மடியும் விரய உணவிலிருந்து பலதரப்பட்ட பாக்டீரியாக்கள் வெளியிடும் மீத்தேன், அசிடேட் உள்ளிட்ட நச்சுக்களை நவீனத் தொழில்நுட்ப இயந்திரங்களில் புகுத்தி, நமக்குப் பயன்படும் சமையல் எரிவாயுவாக மாற்ற முடியும். அந்த மாற்றத்தையும் நாம் காணலாம்தானே!

முன்னுதாரண தென்ஆப்பிரிக்கா

விரயம் செய்யப்படும் உணவைத் தடுப்பதிலும் அதை மறுபடியும் பயன்படுத்துவதிலும் முன்னெடுப்புகளுக்கு முகம் கொடுக்கும் உலக நாடுகளில் டென்மார்க்கும் நெதர்லாந்தும் முன்னிலை வகிக்கின்றன. இந்த நாடுகளில் உணவுப் பாதுகாப்புத் துறையானது சமூக நிகழ்வுகளில் உணவு விரயம் செய்யப்படுவதைத் தடுக்கும் விதமாகக் கண்காணிப்புப் படைகளை அமைத்துள்ளன. விரயமான உணவை மறுபடியும் உதவும் உணவாக மாற்றும் முயற்சியில் தற்போது தென்ஆப்பிரிக்காவும் இறங்கியுள்ளது.

எப்படியெனில், விரயம் செய்யப்படும் காய்கறி மற்றும் பழங்களில் ‘பிஎஸ்எஃப்’ (Black Soldier Fly – BSF) பூச்சியின லார்வாக்கள் அபரிமிதமாக வளர்கின்றன. இவை அந்த உணவுக் கழிவுகளில் வினைபுரிந்து, அவற்றைப் புரதம் நிறைந்த உணவாக மாற்றியமைத்துவிடுகின்றன.

Is food wastage a social crime..? - FOOD ARTICLE


Food wastage is not unique to India;  Social injustice happening all over the world!  Disrespect to the farmer who produces the food item in the midst of so many difficulties.  Food is not inanimate.. it is a living substance.  Aside from the tragic situation where about 70 crore people in the world go to bed every night with no food at all, about 20% of the total food production is wasted, according to the UN ‘Food Consumption Index 2021’ study.

 According to the study, which was conducted in 54 countries, 9.31 crore tonnes of food was wasted globally in 2019.  Of these, 61% were reported to be wasted from homes, 26% from restaurants and 13% from retail.  In 2019 alone, 6.80 crore tonnes of food was wasted in Indian households.  The figure indicates that 74 kg of food is wasted per household per year per household, and 47 kg of food is wasted from food served at festivals, restaurants, weddings and social events.

Many people think that 'food wastage' ends with a plate of food and a leaf eaten.  Economic science says that wasting food is the greatest social crime committed by man.  This is because the cost of producing food from the ground, evolving it into food with a single fuel, and passing it through many stages of proper protection and distribution to the plate is multiplied by the wastage of food.  It greatly affects the economy of that country.

Moreover, it is said to be intertwined with the environment.  How?

Food that is wasted by consumers in many ways, such as leftover food and spoiled food, returns to the soil.  There it emits abundant greenhouse gases called ‘methane’.  It is also a factor in global warming.  It contributes to climate change.

How many of us know that food waste is one of the reasons why the rainy seasons are changing now, the summer is prolonging unnaturally, the cold is gripping us, the huge glaciers are melting and the sea level is rising suddenly?Shouldn't food waste be stopped if we want to control environmental pollution?

Instead of buying everything for ‘favorite food’ and putting a little leftovers into everything, the first step to prevent food wastage is to develop the ‘fragmented biodiversity’ habit of buying what you need, eating what you need, and still throwing leftovers into the trash, giving it to those who need it.  We can bother with it today!

In today’s scientific and technological development, waste will be wasted

Properly covered, it will withstand a great deal of adverse conditions.  Let's make way for that too!  Next, modern technology can inject toxins, including methane and acetate, into the cooking gas we use, releasing a wide variety of bacteria from food waste that folds into the soil.  We can see that change too!

 Exemplary South Africa

Denmark and the Netherlands are among the leading countries in the world facing advances in preventing and reusing wasted food.  In these countries, the Department of Food Safety has set up surveillance forces to prevent food wastage at social events.  South Africa is also currently embarking on an effort to turn waste food back into a food aid.

 Somehow, ‘BSF’ (Black Soldier Fly - BSF) insect larvae thrive on wasted vegetables and fruits.  These react with the food waste to convert it into protein-rich foods.  This new food is used for poultry and fish farming.  Based on this, South Africa has started a large number of small businesses.  Martino Auto, head of the UN Food Waste Management and Environment Program, called on other countries in the world to follow suit.  India should follow suit.

 Thus the community and the government can put an end to the food wasted by hand;  It can also help protect the environment by turning leftover food into useful food without throwing it in the trash.
